Zhong shui jiao, boiled pork dumplings drizzled with chili oil, are a centuries-old Sichuan street food. The tangy-spicy-sweet sauce deserves to be put on more than just dumplings, though. Crafted with fragrant chili oil, aromatic "fu zhi" soy sauce, brown sugar, mushrooms, garlic, and a host of other spices, our Zhong Dumpling Sauce is slow-brewed to maximize umami-rich deliciousness. Try it with dumplings or noodles, drizzle it on grilled fish, and toss it with roasted vegetables.

    Mala translates to “numbingly spicy,” and is the signature flavor of Sichuan cuisine. With a mix of 11 herbs and spices, including Erjingtiao chili and prized tribute pepper, our Mala Spice Mix is marked by fragrant, tingly spice. Use it as a marinade for chicken, lamb, fish, roasted potatoes, or simply sprinkling it on pop corn.

      An ancient Chinese spice that has been cultivated in Sichuan for thousands of years, huajiao (Sichuan pepper) is responsible for the cuisine’s famous tongue-tingling sensation. Our huajiao is grown in Qingxi village, along the mountainous Tea Horse Road, an ancient trading route dedicated to the transport of tea and spices from China to the West. The small village produces a variety called gongjiao (Tribute Pepper), so prized for its many uses that it was offered in tribute to the emperor. It is excruciatingly hand-picked to preserve its delicate oils, and sells out almost immediately after the annual harvest in August.  Thrown whole into long braises and stews or roasted and ground to top iconic dishes like mapo tofu and twice-cooked pork, just-harvested gongjiao can be transformational.


      The most popular variety of chili in Sichuan, Erjingtiao is known for its mild spice but intense fragrance, and is the key ingredient used in our Sichuan Chili Crisp and Zhong Dumpling sauce.  Its uses are varied and inventive: dry-fried in oil for a scorched-chili flavor; ground up and combined with aromatics to create the canvas for the most fragrant chili oils; and mixed with various other spices to make dozens of Sichuan flavor profiles. Chop some up and add to your stirfries or try your own home-made chili oil!
